Layers of biscuits, mascarpone & blueberries, infused with Amaretto – this delicious Italian dessert is so simple to whip together. Make it in advance & leave it in the fridge for a few hours, this allows the flavours time to mingle, creating the perfect “pick me up” dessert – it’s indulgent, luscious & luxurious!  My recipe makes 4 individual desserts (I use whisky tumblers), or you can make one large dessert in an elegant glass bowl.


 

Ingredients

500g mascarpone (I used the light version)

1 cup double cream

6 Tbsp. Castor Sugar, sifted

1 tsp. Vanilla extract

½ cup Amaretto liqueur (I used a brandy & Amaretto cream liqueur)

½ a bag of Amaretti Italian biscuits, or biscotti will suffice

A punnet of fresh Blueberries, or 200g frozen 


 

  


Start off by combining the mascarpone, double cream, vanilla extract and castor sugar in a bowl – whisk together until smooth – resist licking the whisk clean, you could get your tongue stuck! 
 

Next, pour Amaretto into a shallow bowl & line up your glasses or bowl.  Dip the biscuits into the Amaretto & let them soak each side but don’t let them go soggy.  (If some get too soggy, just eat those ones…) Line the bottom of the glasses or bowl with the soaked biscuits.





 
Now spoon half of the mascarpone mixture over the biscuits and sprinkle with blueberries.

 

Repeat with another layer of biscuits soaked in Amaretto & then top with remaining mascarpone mixture.  Top with remaining blueberries, cover with cling film & refrigerate for at least 2 hours.
